One-pan rice and chicken thing
- Red Pepper
- Pepitas, if you like a little crunch and want to get rid of yours
- Black beans, canned, rinsed
I got hungry late one night and had all this stuff already… So I threw it all together and it was very nice. Following the suggestion of minimalist baker, I have started freezing kale and spinach so that I can throw it in whatever I want. I also always have frozen bell peppers ready to go. And frozen chicken from TJ’s, ready to cook.
Also, since all this stuff tastes good on its own, you can really add however much you want of each ingredient. Depending on what you’re in the mood for… love how that works.
I cooked the chicken, then cut it. In the same pan, just add a few tablespoons of butter (yum), enough water to coat the bottom of the pan, and the rest of the ingredients. Cover the pan so the rice will absorb the water! Cook until it’s hot. 🙂 Easy enough?
